I think it makes sense. I First exclude ALL files on the source drive and then I INCLUDE only the folder I want which will also copy all of that folder's sub folders and contents.
With this setup...

eSATA and SD
So far that has proven to be the case. My SD backup on my CalDigit VR MINI even boots whan connected as eSATA...

VM backup
Just do a normal SD backup and as stated make sure your VM is shut down before backing it up. You will BU all your files including the data that is contained in your Windows VM.
