Is it possible to back up single folders?

Hello everyone!

Superduper seems to be great to create bootable backups, but I am also interested in being able to backup single folders (containing images) to an external HD. Is this possible?

Would it be possible to have this HD formatted as FAT32 so it is possible to access the data both from PC and Mac?

We're happy to copy single folders using scripting, but not to or from FAT32.
