Using SD to back up folders only?

I have a Mac with 2 external Firewire drives connected. One contains work files in a folder named "Work" ;-) and the other drive "backup" is where I want to back up just the "work" folder to.

The are other files on both drives that I want to leave untouched.

Up til now I've been using LaCie Silverfast but on my new machine running Leopard this no longer works. I'd like to use SD but can't see how to get a folder to back up to another folder.

Anty suggestions please let me know
