Backup single directory

I need to come up with a system to do daily backups of three systems.

We're talking images here - lots of images.

I only need to back up work in progress on those three systems. Thus, I want to have people work only in a single directory (with subdirectories, of course), and have scheduled backups done to a local disk every night.

Being new to SuperDuper, I have no idea how to go about starting this.

Can someone point me in the right direction to get started with this process?
