The scripts themselves are quite detailed and show exactly what is and isn't copied.
It's not unusual to have quite a bit not copied, however. Just the sleep image itself is as large as the memory in the device. Add swap files, temporary files, "MobileBackups", the Spotlight index and you've got a pretty substantial collection of files.
