Excluding a Folder

I want to schedule a back up for my entire drive except 1 folder (and its' contents of course) is there anyway to do this?

My bad...I assumed the "Search" function was searching the user guide and found nothing...just found out this actually is just a search function for my computer's hard drive(s).
