We always evaluate the entire drive, since we're generally designed to copy the entire drive with some exceptions, not a single folder.
We can't copy directly to a network drive - only to a sparse image, as you've seen.
We cannot copy to a FAT-formatted drive - we're designed to support HFS+/Mac OS Extended volumes.
