OK, Nick. The problem here is that the file system is corrupted in a way that's causing the kernel to throw up its hands and panic.

What I'd do is boot from your Tiger DVD and run Disk Utility from the Installer menu. Use that to repair the disk structure, NOT its permissions. Repeat that until it indicates everything's OK, then boot back to the drive and try the backup again.
