I would do it the way you describe. I would not use Time Machine to recover a machine verbatim, as Time Machine does NOT backup the whole set of content (which I discovered unfortunately when I tried...

Reconsider crashplan

You should reconsider crashplan as you can still use your own server, but use them as the transport/encryption mechanism. And it is relaiable.
