I've been pretty happy with the WD MyPassport SSDs. I wouldn't let the size get too tight - never hurts to have too much, and as I said, the price isn't high.

If you want to review schedules, use Window > Scheduled Copies...

When you restored with Disk Utility, it did a low-level restore which wiped all the volumes. If you look at my other messages here, you'll see what I recommend...

The problem is that you didn't fully erase the drive that you had Catalina on, and instead likely either didn't remove one of the two volumes, or left a volume around that was a "partial" volume...
