Settting up a Schedule & Incremental backups

I am currently backing up to 2 rotating drives. Here is what I would like to do.

First, can I schedule the drives so that I can pick the day that the rotation occurs. Currently Friday would be great, but SD wants Wednesday to be that day.


Secondly, is there anyway to do incremental backups? ie, On day 1, I do a complete backup. On day 2, I backup only changed files to a disk image. On day 3, I backup only changed files to a disk image. Etc. So if I need to go back to a file from day 2, I can.
