You restored with Disk Utility, which is going to do a low-level restore, and take the name of the source drive (which is part of the low-level info). A restore with SuperDuper won't change the name, since we're copying the contents, not the "drive".

But changing the name in Finder and restarting should certainly change the name - it's a volume name like any other and can be set...
