Backup Specific Folder Only

I know there is a way to use SD to back up only one specific folder and it's contents to another folder on an external drive but I can't seem to do it. Please help.

While you can single out a single folder on the source, the result cannot be placed into some other folder on the destination: you're always copying one source volume to a destination volume.

Can I do this to an image to prevent overwriting?
