I just restored (erase target/copy all files) my start-up volume from a backup and I noticed that I am NOT getting the warning messages related to opening apps for the first time...

I'm not complaining, but I thought that that info was lost during SD! cloning.

Nope: if you did a full restore you won't get those warnings.
